Marinated mackerel, juniper, oregano and peppers

METHOD:

For pepper sauce: wash the peppers, remove the seeds inside and cut them to pieces. Place them with oil and salt in a baking pan and bake at 250 ° C for 10 minutes; In the meantime, in the non-stick pan, fry the onion with a drop of oil. Once it has been stewed, add the peppers, half a glass of water and cover with a lid for about 8 minutes, remove from the heat and allow to cool, after which pour it into the extractor until a homogeneous sauce is obtained.

In a jug of water bake the datter for 10 seconds, cool them in cold water and peel them. Cut them in half and place them on the baking tray with the baking sheet below, sprinkle with salt and sugar, oil and herbs, bake at 70 ° C for 1 hour.

Fill and spit the mackerel, marinate with white vinegar, salt, juniper berries and oregano for 3 hours.

PRESENTATION:

Heat the pepper sauce and put it at the base of the dish, cut the tuna fillets in half and place the piece on the crouton piece. Add 2 or 3 basil leaves as garnish.
